2 cup (250g) rye flour
1 1/3 cup (200g) '00' flour bread flour or plain (all-purpose) flour
3 teaspoon (7g) dry yeast
2 tablespoon honey
1 1/3 cup (330ml) lukewarm water
2 tablespoon pepitas (pumpkin seed kernels)
2 tablespoon sunflower seeds
1 tablespoon sesame seeds
1 tablespoon poppy seeds
These nutritious rye, honey and seed pull-apart rolls are a delicious and healthy accompaniment with dinner - made with loads of tasty wholesome ingredients.

Place flours, salt, yeast, honey and the water in a medium bowl of an electric mixer.
Mix with a dough hook for 10 minutes or until smooth and elastic.
Place dough in an oiled bowl. Place bowl in a large plastic bag; seal bag.
Stand in a warm place 1 hour or until dough doubles in size.
Preheat oven to 200°C. Lightly flour a large oven tray.
Punch down dough with your fist. Knead dough on a lightly floured surface until smooth. Divide dough into 12 portions; knead into smooth rounds.
Combine seeds in a shallow bowl. Roll rounds in seeds to coat. Place rounds, 1cm apart, on tray into a rectangle three across and four down.
Place tray in a large plastic bag; seal bag. Stand in a warm place for 30 minutes or until risen slightly.
Remove tray from plastic bag. Spray rolls and tray lightly with a fine mist of water or sprinkle lightly with water.
Bake rolls for 20 minutes or until browned and sound hollow when tapped on the base.
Transfer rolls from tray in one piece to a wire rack to cool.
If you don’t have a mixer with a dough hook, knead the dough by hand on a lightly floured surface for 10 minutes by pulling and stretching the dough every quarter turn. Spraying the rolls with water gives them a crisp crust. These rolls are best served slightly warm on the day you bake them. Seeds such as pepitas, sunflower, sesame and poppy seeds contain protein, essential amino acids as well as beneficial vitamins and minerals.
