Brazilian Cheese Puffs (Pao De Queijo)

300 ml milk

150 ml vegetable oil

1 1/2 teaspoons salt

500 g tapioca starch

2 eggs

250 g Parmesan cheese grated

Directions

Preheat oven to 180 degrees C and oil and flour a baking tray.

In a large saucepan, heat the milk, oil and salt just to the boil.

As soon as the milk starts boiling, add all of the tapioca starch.

Stir constantly until it forms a dough that pulls away from the sides of the pan. Remove from heat and let cool.

When cool, stir in the eggs one at a time until incorporated.

Stir in the cheese, then knead until it all comes together.

Grease your hands with butter to prevent sticking, and shape the dough into small balls.

Place on a baking tray with enough space between them to allow rising.

Bake 25 minutes or until puffed and golden.
