Brandy Snaps

4 ounces butter

4 ounces (1/2 cup) treacle

4 ounces castor sugar

1 dessert spoon brandy

1 teaspoon ground ginger

4 ounces plain flour

Melt butter in small saucepan. Stir in first treacle, then sugar then brandy. Stir ginger into flour and when treacle mix is hot, take from the fire, sift flour and ginger into it. Beat thoroughly until the batter is smooth. Grease baking slide (cookie tray) drop batter in large teaspoon on it (it will spread while cooking). Bake for about 8–10 minutes in moderate oven. When bright golden, remove and let cool slightly and wind around wooden spoon handle. Cool completely. Fill with whipped cream and serve.
